Wednesday Dinner 3/7/2012






Good morning, I hope you are blessed and doing well and looking forward to a fabulous weekend. Before I get into this weeks "Wednesday Dinner", I have to share with you the link for the "Invisible Children" (http://www.invisiblechildren.com.s3-website-us-east-1.amazonaws.com/). Now this weeks "Wednesday Dinner" was homemade, YEP that's right! I decided to make soup! This is my 2nd attempt at soup making and I really enjoy it. So last night I made Santa Fe Chicken Enchilada Soup! Of course I added my own twist to it, here's the recipe:

To make it more flavorful, I did the following: 1. seasoned my chicken with pepper, garlic salt and seasoning salt. 2. added chopped onions to the mix and 3. added cheese to the bottom of my soup bowl. I have to say this soup was bomb.com! And it took less that 45 minutes to make! Once the soup was done I added cheese to the bottom of my bowl, ladled the soup in the bowl and topped the soup with cilantro, tortilla strips and sour cream. I will definitely be making this soup again and if you like soups, I suggest you try making it too.
